Gravy:
- 3 Tbsp cornstarch
- 2 Tbsp water
- 6 Tbsp butter
- 30g all purpose flour
- 590ml beef broth
- 280ml chicken broth
- Pepper, to taste
For Fries:
- 2 lbs potatoes, (3-4 medium potatoes)
- Peanut or other frying oil
Toppings:
- 240g-360g cups cheese curds or to taste.

Step 1: Prepare the Gravy
In a small bowl, mix the cornstarch with water until it dissolves, then set it aside.
In a large saucepan, melt the butter over medium heat. Add the flour, stirring consistently for about 5 minutes until the mixture develops a golden-brown color.
Pour in the beef and chicken broth, whisking until it comes to a boil. Gradually add about half of the cornstarch mixture and let it simmer for a minute. If you prefer a thicker gravy, slowly incorporate more of the cornstarch mixture until it reaches your desired consistency. Season with pepper and adjust the salt to taste. The gravy can be prepared ahead of time and kept warm until your fries are ready.

Place the freshly fried or baked fries in a large, clean bowl. Lightly season with salt while they’re still warm. Pour a ladle of hot gravy over the fries and use tongs to toss them until they're well coated.
Add cheese curds and toss again, allowing the heat from the fries and gravy to slightly melt the curds. Serve immediately, topped with freshly ground pepper if desired.
