Cornish Yarg is all about the nettles! The leaves, which attract naturally occurring moulds, are brushed on in a concentric circle pattern. As the cheese matures, the edible wrap imparts a delicate, mushroomy taste and develops a bloomy white appearance. Six weeks later, nettled Yarg is fresh and creamy under its beautiful rind, with an irresistible crumble in the core.
