Smoked Gubbeen is a beautifully crafted artisan cheese from the Gubbeen Farmhouse in Ireland, made with cow’s milk and traditional rennet. Starting with a washed rind that develops a rich microflora of yeasts and bacteria — including brevibacterium linens and white candidum — Gubbeen matures into a pinkish, nutty-scented cheese with a softening, flavourful body.
The cheese is then gently smoked using the traditional Pinney system, carefully designed to impart a delicate smoked flavour that complements, rather than overwhelms, the natural character of the cheese.
Smoked Gubbeen is perfect for cheeseboards, melting into savoury dishes, or enjoying simply with rustic bread and a good ale.
